Gentle wild yeast fermentation and precise punch-downs enhance structure before the wine rests for 10 months in French oak, developing depth and spicy complexity.
Aromas of rose petals, ripe cherry, and cedar lead to a layered palate of bright red fruit, wild thyme, and earthy minerality. Silky and supple, yet backed by assertive tannins and fresh acidity, this wine carries serious fruit concentration and impressive length.
At the final blending, a collective decision is made—a ‘Show of Hands’—to ensure the finest expression of the vintage.
