Des clones s\u00e9lectionn\u00e9s issus de vignobles cultiv\u00e9s biologiquement sont r\u00e9colt\u00e9s t\u00f4t afin de pr\u00e9server leur fra\u00eecheur, puis ferment\u00e9s en grappes enti\u00e8res dans des cuves ouvertes. Une fermentation douce \u00e0 base de levures sauvages et des pigeages pr\u00e9cis renforcent la structure avant que le vin ne repose pendant 10 mois dans des f\u00fbts de ch\u00eane fran\u00e7ais, d\u00e9veloppant ainsi sa profondeur et sa complexit\u00e9 \u00e9pic\u00e9e.<\/p>\n<p data-start=\"708\" data-end=\"974\">Des ar\u00f4mes de p\u00e9tales de rose, de cerise m\u00fbre et de c\u00e8dre m\u00e8nent \u00e0 une bouche complexe o\u00f9 se m\u00ealent des notes de fruits rouges vifs, de thym sauvage et de min\u00e9ralit\u00e9 terreuse.
